Lately I've been reading a lot about eating healthier so that I can feel better (and if I look better then I get a two for one!). I want to have energy and not be tired all the darn time and be able to run around with my kid(s). (No, that doesn't imply I'm pregnant. Just someday)
I've really been inspired by a few people (mostly her and her) and their insights on actually being healthy. They are taking a vegetarian approach to it all and it looks exciting! We'll still eat some lean meats and will definitely not pass up a good hamburger or chicken fingers every now and then. And really, if you think about it thats basically what it says in the doctrine and covenants-and I've been thinking a lot about that lately too...
"And again, verily I say unto you, all wholesome herbs God hath ordained for the constitution, nature, and use of man— Every herb in the season thereof, and every fruit in the season thereof; all these to be used with...thanksgiving. Yea, flesh also of beasts and of the fowls of the air, I, the Lord, have ordained for the use of man with thanksgiving; nevertheless they are to be used sparingly;... And all saints who remember to keep and do these sayings, walking in obedience to the commandments, shall receive health in their navel and marrow to their bones..." (D&C 89:10-12,18)
So here I am, Ms. Semi-vegetarian and I'm dragging my family down with me! I've already found some really yummy recipes from cook books I got at the library and I'm super excited to try them out! AND none of them involve tofu (yuck!) and they all contain LOTS of protein. How great! I'll post recipes for you to show you how yummy it is!

Very inspiring Heather..and cheaper too!Look into the good oils that we should all have too..like coconut oil...quite and investment in your health!

tofu is awesome, heather... give it a chance in tofu pudding and you will repent! :) for those of us who can't have dairy we have to improvise... i've learned to love it. haha
You're a brave woman!! Growing up in a family who raises beef for a living, I don't think I could ever get away from that good ol' hearty meat!!! In fact, sometimes I'd even choose filet mignon over dessert, yes, me, it's true!! I love it that much! But, I would be interested to see some of the recipes you find to be tasty. Happy Veggying!
